Chutney in the Raw (Chris Goreham)

Ingredients:

1 marrow (or courgettes) diced

3 carrots - grated

1 cauliflower - in florettes

10 oz salt

1 cucumber - diced

5 pints water

3 medium onions - chopped

Soak all the above in the salt water overnight, drain and rinse well the next morning.

Sauce ingredients:

3 pints vinegar (white if available)

3 oz cornflower

1/2 oz curry powder

1 1/2 oz dry mustard

1/2 oz turmeric

1 1/4 lb Demerara sugar

Mix sauce ingredients together.

Butter a large saucepan (to prevent sticking)

Add both lots of ingredients

Bring to the boil for 5 minutes, stirring frequently.

Allow to cool.

Preparing jars -

Preheat oven (160ยบ - Gas Mark 3)

Ensure jars are clean and free from cracks.

Place jars on their sides in oven for 10 minutes.

Turn oven off.

Leave jars in oven until chutney is ready.

Potting -

Stir mixture.

Put into warm clean jars.

Place waxed disc (or greaseproof paper) on top immediately.

Cover when cold.

Label and date.
