Mincepie flaky pastry

12 oz (350g) Lard

12 oz (350g) Plain Flour
Pinch of salt Boiling water

Put ¼ lb chopped lard into a bowl, add one cup of boiling water. When melted add ¾ lb plain flour and a pinch of salt. Gradually beat with a knife until all is mixed.

Leave overnight in a fridge.

Next day - add ½ lb lard at three rollings dotting it on the pastry and folding in 3 both ways, turn ¼ turn each time.

Leave overnight in a fridge.

Next day - roll out pastry thinly and make up.

Cook at 200°.
